We are talking about one of the wines which enology departments find the hardest, and that is why we wanted to dedicate today\u2019s post to ros\u00e9 wines and their <strong>production.<\/strong><\/p>\n<p>Firstly we have to clarify that the production is very similar to the white wines one, but it is made with red varieties musts. According to each denomination legislation, it will also be able to include white varieties musts.<\/p>\n<p>Besides, there are two types of ros\u00e9 wine\u00a0: the one <strong>resulting from the pressing<\/strong> and the one <strong>resulting from the draining.<\/strong><\/p>\n<p>So the process would begin for both types the same way\u00a0: after <strong>receiving the grapes<\/strong> in the winery during the harvest, the <strong>destemming <\/strong>and<strong> grinding<\/strong> would begin. For the first type of ros\u00e9, the following step would be the <strong>pressing<\/strong> which is the action of pressing the grapes to obtain the must. For the second type, after the grinding, instead of pressing the grapes, we would deposit the resulted paste in a tank (<strong>vatting<\/strong>) to then, macerate the must with the skin and pulps of the grape. Once the maceration is over, the draining would take place, which is a technique that extracts the must by gravity instead of pressing the paste.<\/p>\n<p>When the must is ready both types of ros\u00e9 share the same production process again.<\/p>\n<p>The next stage would be the <strong>settling<\/strong> in order to have the must as clean as possible, and then, the start of the <strong>alcoholic fermentation.<\/strong><\/p>\n<p>Once the fermentation is over, we proceed to the <strong>clarification, stabilization<\/strong>, and <strong>filtration,<\/strong> and finally, the <strong>bottling.<\/strong><strong>\u00a0<\/strong><\/p>\n<p>Ready to drink!<\/p>\n<p>&nbsp;<\/p>\n<p>In our case, for our ros\u00e9 <strong>Cuatro Pasos<\/strong>, we choose the fresher menc\u00eda grape which comes from vineyards with low sun influence, low stress and harvested a little before the red wines to mantain the acidity.
